Pancake day

 

 

In preparation for Pancake Day, we thought we’d share this banana recipe we tried at the weekend. The required measurements are easy enough and this mix is surprisingly light despite the addition on bananas. Even better, the ones we had were overly-ripe out so we used them up in the batter.

For toppings, we suggest the usual raspberries, strawberries, banana, maple syrup and a cup of coffee.

We found this recipe online and makes around 24 pancakes.

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 12 teaspoon salt
  • 2 eggs, beaten
  • 2 cups milk
  • 4 tablespoons vegetable oil
  • 4 ripe bananas, mashed (leave a few chunks)

Method

  • Combine flour, sugar, baking powder and salt.
  • In separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be a little lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • Pour or scoop batter onto pan, using about 1/4 cup for each pancake.
  • Cook until pancakes are golden brown on both sides.
